Pan-fried tilapia


This is what I make if I am uninspired by the contents of my fridge and/ or I'm in a hurry.  It always tastes delicious, so there aren't any complaints when I make it.  Here's the recipe (such as it is):

Pan-Fried Tilapia
tilapia filets (one for each person)
paprika (to taste)
salt (to taste)
pepper (to taste)
1/2 cup AP flour
1-2 T. butter

Rinse and dry the tilapia filets.  Sprinkle with paprika, salt and pepper to taste.  Dredge the filets in the flour, and shake off excess.  Melt the butter in a non-stick or well-seasoned cast iron skillet.  Pan fry the filets until golden brown and delicious, and the inside flakes when cut with a knife.  Serve with rice and steamed veggies, or on top of a bed of greens for a healthier option.

This "recipe" also works great with boneless, skinless chicken breasts.  Just be sure to pound them out to an even thickness.
